Although it can be prepared in 20 minutes or less, this recipe combines a variety of complex favors that will surprise anyone you have over for dinner. The sweetness of the strawberries is complimented by the tart fruitiness and mellow flavor of the balsamic glaze, and jalapeno pepper turns up the heat. Depending on your taste, you can swap mint or cilantro for the basil, though strawberry-basil is a classic combo we love!
4 (5-ounce) skinless boneless chicken breasts cutlets
1 tsp salt
1/2 tsp black pepper
2 C. hulled, diced strawberries
3 tbsp balsamic glaze
2 tbsp thinly sliced fresh basil
2 tbsp thinly sliced scallions
2 tsp minced jalapeno
Spray ridged grill pan with nonstick spray and set over medium heat.
Sprinkle chicken with 1/2 tsp salt and 1/4 tsp pepper. Place chicken in pan and grill, turning once, until chicken is cooked through, 8-10 minutes.
Meanwhile, to make salsa, combine strawberries, balsamic glaze, basil, scallions, jalapeno, remaining salt and pepper in medium bowl and stir gently to combine.
Serve chicken with salsa.
